Founded by George and Mo, this Japanese-inspired listening bar is built on a love for craftsmanship and quality. A New Beginning
After their previous restaurant, Vanderveen, closed in the wake of the pandemic, Mo and George were looking for a fresh start. That’s when they found the space for CUE. The name comes from the musical term for waiting your turn.
Amsterdam wasn’t a planned destination, but they saw an opportunity, something missing in the city’s fine dining scene. With George’s background as both a musician and chef, and a deep appreciation for Japanese culture, CUE was born: a space where food and music elevate each other.
The Sound of Cue
Music is at the heart of the experience. “Food, drinks, and music all go hand in hand,” George explains. The listening bar offers expertly crafted cocktails and Japanese-inspired bar bites, while the restaurant delivers a full culinary experience, all set to a carefully curated soundtrack.
CUE welcomes a wide range of collectors who come in to play music, with a strong focus on the golden era - mostly the ’70s. Their goal isn’t to chase trends but to create something timeless.
Raw, Creative, and Unapologetic
CUE's approach to cooking is raw and straightforward, inspired by George’s travels and experiences across the world. The menu focuses on pre-industrial techniques: smoked, fermented, charcoal-grilled, and pickled flavours. It’s about complex simplicity, where every element has a purpose.

For George, style should be simple, functional, timeless, and built to last. That’s why he’s drawn to Dr. Martens. “They focus on craftsmanship and timeless design, just like we do at CUE.”
